Sugar beet molasses is one of the important by products in sugar industry, it dark brown to black colored and rich source various polysaccharides. So, can be used production ethanol by Saccharomyces cerevisiae. Data showed that 2% inoculums size was best all tested for media. Where alcohol 4.6 ml /100 media with economic coefficient 53.7% yield 46.1%. Also, incubation periods were from 2 14 days. Maximum noticed at sixth day fermentation, 4.71% ml/100ml medium. The 46.1%; respectively. Results 30°C temperature yeast Saccharomyces cerevisiae produced high value production. 4.61 /100ml medium 46.1% coefficient. While PH 5 optimal molasses, where 4.61%, 46.1%, Increasing up 5.5 did not increase but recorded decrease value. 20°C 14.0% initial, 5.16% 40% coefficient, while maximum 6.3% 49.0% initial 14.0%.
